Franck Massard Mas Sardana Cava Brut Nature NV

Very dry, very light, but somehow still manages to be both elegant and fulfilling in flavour.

Franck Massard, a French sommelier who formally worked in the UK, uses local grape varieties from Spanish vineyards to piece together this bone dry Cava.

Light in the glass with fine bubbles, a green-ish tinge and aromas of grapefruit and freshly-fallen apples. On the palette it felt a touch bitter but intriguingly unique compared with your classic Cava styles.

There’s a touch of creaminess too, but the acidity is gratifying and carries through the fruit well. All round a great value-for-money bubbly.

 

Serve with…

…tapas. Makes a great partner with a range of Spanish tapas, especially lightly spicy, crunchy dishes. Try to avoid with tapas that might be a little sweet.
